When the Stars Align: A Blackberry Bonanza!

There's something truly magical about eating in season. The flavors are brighter, the produce is fresher, and there’s an inherent satisfaction in knowing you're enjoying nature's bounty at its peak. And when your own garden provides that bounty? Even better!

This year, my garden truly outdid itself. We had a particularly cool spring, which seemed to be exactly what my fruit plants needed. While everything flourished, the undisputed star of the show was my blackberry patch. And let me tell you, when you wish for a good harvest, be careful what you wish for! Those blackberries came at me fast and furious. I'll admit, a solid 10% never even made it past the garden gate (quality control, you know!). But the remaining 90%? They were destined for deliciousness in my kitchen.

It was a whirlwind of blackberry-fueled creativity, and I'm excited to share some of the highlights:

First up…

Sara Foster's Berry Muffins (Blackberry Edition)

I’m a big fan of Sara Foster’s recipes, and her Berry Muffins provided the perfect canvas for my mountain of blackberries. The recipe is straight forward and quite easy. As the recipe states, this has been a staple at Fosters Market in Durham NC for over a decade. I took the liberty of subbing the blueberries for blackberries and sprinkling Temura sugar on them before they went into the oven. The result was a batch of incredibly moist and flavorful muffins, bursting with juicy, tart berries. There is a lot of magic to this recipe but I think breaking up some of the berries is why this recipe shines. They were absolutely perfect for breakfast or an afternoon treat with a cup of tea. I love sharing whatever I bake with anyone that crosses my path and I can tell you, these were a hit. They were at their very best cooled a bit out of the oven but good cold too.

Sourdough Blackberry Scones

If you've ever dabbled in sourdough baking, you know the satisfaction of transforming a simple starter into something extraordinary. These sourdough blackberry scones were no exception. The subtle tang of the sourdough perfectly complemented the sweetness of the blackberries, creating a scone that was both rustic and refined. A dollop of clotted cream or a pat of butter was all they needed. Want the recipe? Honestly folks I forget which one I made but Google it. I promise you’ll land on a good one. And, I did try to find it for you. Sorry

Blackberry Custard Pie

This pie is pure comfort. The rich, creamy custard provided a beautiful contrast to the vibrant blackberries, all nestled within a flaky, golden crust, homemade of course! I say that not bragging but they are so easy to make and IMHO elevate any pie you’re making! It was the kind of dessert that makes you want to curl up on the couch with a good book, savoring every bite. Simple, elegant, and utterly satisfying. It was also impressive enough to proudly serve to anyone, at any time. As noted on Eckert’s website this recipe is adapted from a peach custard pie and I cannot stop making that one!

Fresh Blackberry Chocolate Bark

And finally, my own little creation that stole the show: Fresh Blackberry Chocolate Bark. This one checks all the boxes: easy, fast, healthy, and oh-so-delicious. Seriously, it's a game-changer! Imagine rich, dark chocolate studded with fresh, juicy blackberries. The slight tartness of the berries cuts through the sweetness of the chocolate, creating an irresistible combination of flavors and textures. It's the perfect guilt-free indulgence and a fantastic way to enjoy those fresh berries without a lot of fuss. Sure any dried fruit could work here but there was something surprising and divine about the fresh from the vine burst of flavor.

So, how do you make this magic happen? It's seriously simple: just melt your best chocolate..." or "Ready to try it? Here's how:" Seriously just melt your favorite high-quality dark chocolate (70% cacao is my go-to in a double boiler or I use a microwave and every 30-40 seconds I stir the chocolate until it’s almost melted. Take it from the microwave and add a bit more of the chocolate. This method helps mimic a tempered result that can give you the SNAP in the chocolate and keeps a glossy finish. Then pour it over your fruit that has been placed on wax paper or a silpat, place it in the fridge until firm. I also sprinkled with a bit of sea salt while the chocolate was still wet.

If your like me and love a piece of something sweet in the evening, nothing could make you happier then this berry studded chocolate. I haven’t tried it yet but I imagine any fresh fruit that doesn’t turn brown could work here.

The blackberries are situated fairly close together so not to find yourself eating too much chocolate and not a berry bite. I cannot express how devine that POP of fresh blackberry is in your mouth. FYI, you’ll note a few pistachios in the photo. Good but not necessary.

This year's blackberry abundance was a delightful challenge, and I loved every minute of turning those juicy gems into an array of treats.
